The Zambian Root Powered Sweet Beer
Munkoyo is a unique Zambian brew made by mixing maize porridge with the crushed roots of a specific wild plant. Unlike standard ales, the roots naturally jumpstart the fermentation process, creating a sweet, non-alcoholic or mildly boozy beverage.
This traditional drink, often called sweet beer, relies on the active enzymes found in the Rhynchosia venulosa roots to break down starches.
